Light n' Easy Popovers

What you need (Popovers):

-2 large whole eggs

-4 large egg whites

-1/2 cup unsweetened almond or cashew milk

-1/4 tsp. salt

-1 scoop Quest protein powder-vanilla (try chocolate or peanut butter)

What you need (Strawberry Jam):

-1 cup frozen strawberries (or mixed berries), thawed

-2 tbsp. Walden Farms maple or blueberry pancake syrup

-1 tsp. orange zest-optional

How to:

Preheat oven to 425 degrees. Spray a 6 cup (simply double recipe if using a 12 cup) popover tin with nonstick cooking spray. Place all ingredients in a blender or mixer and blend on high for 1-2 minutes. Immediately pour batter into the popover tin, filling each cup 1/2 full. Place in hot over on lower rack. Bake for 25 minutes, tops will be very brown and crusty. Don't open the oven door-the popovers can collapse. 

2 popovers=102 calories, 1g carbohydrate, & 20g protein

For the instant strawberry jam:

Smash strawberries with the syrup and zest; spoon over warm popovers, or top with "I Can't Believe it's Not Butter" spray, a sprinkle of cinnamon/Splenda and a drizzle of Walden Farms maple pancake syrup.
