Unstuffed Cabbage Rolls

 

What you need:

1 1/2 lbs. lean ground beef or turkey
1 large onion, diced
1 clove garlic, minced
1 small cabbage, chopped
1 28oz. can diced tomatoes
1 cup tomato sauce
1 tsp. each salt and pepper

 

How to:

In a large skillet, saute ground meat over medium heat, add onion and continue to cook until meat is no longer pink and onion is tender. Add garlic, cook another minute; add the chopped cabbage, diced tomatoes, tomato sauce, salt and pepper. Simmer (covered) for 20-30 minutes or until cabbage is tender; add water if needed for desired thickness. Can also add: bell pepper, sliced mushrooms, and diced carrots. Serves 8.; each serving 150 calories & 6g carbs (using 95% lean ground beef).
