Fluffy Pancakes

 

What you need:


-4 egg whites

-1/2 banana, mashed

-1/4 cup unsweetened Almond Milk

-splash of Vanilla

-pinch of Salt

-1 tsp. Cinnamon

-1/2 scoop Quest-Vanilla protein powder (or 1/4 cup PB2 powdered peanut butter)

-1 tbsp. ground flax seed or crushed walnuts/pecans-optional

 

How to:

 

Using a fork or whisk, beat all ingredients together very well. Pour batter into pre-warmed skillet  (prepared with nonstick cooking spray) over medium heat; brown both sides.                                                                                       

Top with “I Can’t Believe it’s Not Butter” spray and Walden Farms No-Calorie Pancake Syrup!                                                                                                         

Makes 4 pancakes = 168 calories, 34g protein, & 10g carbs (with Quest protein powder)

* For even less calories and carbs substitute the mashed banana for: 1/3 cup pumpkin puree or chunky applesauce, 1 small shredded zucchini or sprinkle of blueberries.

*Recipe can also be cooked in a waffle iron
