Healthy Greek Salad

 

What you need:

-5 tomatoes, chopped

-1 clove garlic, cut in half

-1 cucumber, cut in half

-1 bell pepper, sliced

-1 small red onion, sliced

-16 whole olives

-2 oz. feta cheese, crumbled

-1 tbsp. Olive oil

-2 tbsp. red wine vinegar

-salt & pepper to taste

-dried/fresh herbs of choice (oregano/basil/parsley/dill)

How to:

Place the tomatoes in a salad bowl that has been rubbed with the cut garlic. Add the cucumber, bell pepper, onion, olives, and feta. Sprinkle with dried oregano or chopped fresh basil to taste. Add the olive oil, vinegar, salt and pepper, stir thoroughly. Delicious served on top of arugula. Serves 4; each = 100 calories and 5g carbs.
