Breakfast Frittata

What you need:

-6 egg whites

-2 whole eggs

-1 small onion, chopped

-1 small Bell pepper, chopped

-1/2 cup sliced mushrooms

-1/2 cup chopped spinach

-1/4 cup of grated Parmesan cheese-for topping

How to:

Mix all ingredients together. Season with salt & pepper. Spray a 9X9 pan with non-stick cooking spray. Pour mixture into pan and top with grated Parmesan cheese. Bake at 375 degrees for 20-25 minutes. Top with 1 tablespoon of salsa for added flavor. 

 

Cut into 8 squares. 1 square = 1oz. protein, 30 calories, 1g carb.
